better late than never

We are pretty Irish around here. It just wouldn't be St. Patrick's Day without LUCKY making his stop along the way. I must admit, this is the first year I have NOT bought my kids a *new* beanie for this day! Kinda sad about that since they have mentioned how much they look forward to it each year. Not in the budget right now. So, since I've been sorting and packing up stuff I decided to be thrifty and use the ones from last year (they are so cute). No complaints. In fact, one of the kids asked if they were *new*...lol!



It's days like today when I really miss Jessica. I'm so not used to celebrating these types of days without her here. I know, I know, it's not a major holiday...but it is such a tradition in our home to make it special, seeing that empty spot at the table makes me sad. So Jessica, if your reading this...WE LOVE YOU. WE MISS YOU. It's been a rough day yes, but tomorrow is a new day. Love you babe!

Typically each St. Patrick's Day I make the traditional Corned Beef & Cabbage, but this year we opted for something slightly different. We had Tritip, red potatoes & steamed cabbage. A new cut of meat for us (since I thought I had asked for FLANK STEAK, a slightly leaner cut of beef)...but it was really good. I cut up the potatoes and put them on a cookie sheet with olive oil and baked them instead of boiling, so much more flavorful. I'm pretty lucky to have kids that LOVE veggies, I sure don't remember liking cabbage as a kid!



We ended our day with grasshopper pie (mint & chip ice cream in a oreo cookie pie crust).

Oh Erin, I wish I was more on the ball so I could just expound on my blog! I love reading your stories. I really need to start blogging my feeling more. You're a good woman, and I miss you...really, I enjoyed spending time with you last year.
